1 . Vegan cutlets with herbed mushrooms
This recipe is a great vegan replacement for meat. It’s easy to make and delicious! Serve it with mashed potatoes or rice and green salad. Ingredients: 2 tablespoons of oil; 1 onion, finely chopped; 300 g (10 oz) of mushrooms, finely chopped; 4 cloves of garlic, pressed; 2 teaspoons of dried thyme; salt and pepper to taste; 1 teaspoon of soy sauce or gravy browner; 4 vegan cutlets, also called seitan steaks, defrosted (or use your seitan recipe); 2 tablespoons of water.
Instructions: Heat oil in a large pan over medium heat. Add the onion and cook for 5 minutes, stirring occasionally. Add the mushrooms and cook for another 10 minutes. Stir in garlic, thyme, salt, pepper, soy sauce, or gravy browner and cook for 1 minute more. Divide the mushroom mixture into 4 equal parts and shape each part into a cutlet-like patty.

If you like tofu, you’re gonna love this vegan dinner recipe! It’s a very healthy and easy-to-make dish. Ingredients: 1 pack of tofu (300 g); 4 zucchini ; 3 tablespoons of soy sauce; 2 teaspoons of garlic powder; salt to taste; 1 teaspoon of black pepper; 6 tablespoons of water.
Instructions: Cut tofu into thin slices. Put them between 2 towels and press to remove excess water. Cut zucchini in half lengthwise and scoop out the flesh with a teaspoon (set it aside). Add 1 tablespoon of oil into a hot pan and fry one side of tofu for 3 minutes over medium heat, until golden brown. Repeat the same for the second side of tofu slices. Transfer them onto a plate. Heat one more tablespoon of oil in the pan and saute zucchini flesh (that you scooped out earlier) for 4 minutes over medium heat, stirring occasionally. Add soy sauce, garlic powder, salt, and pepper to taste. Stir well. Arrange zucchini on a plate and put tofu slices on top. Roll up each zucchini slice tightly, starting from the one closest to you. Ingredients: 1 pack of firm tofu (300 g); 2 aubergines ; 3 tablespoons of soy sauce; 3 teaspoons of olive oil; 1 teaspoon of garlic powder; salt to taste; 2 teaspoons of dried oregano; 2 teaspoons of dried basil; 1 teaspoon of dried parsley; 1 tablespoon of dry breadcrumbs.
Instructions: Cut tofu into thin slices and press them to remove excess water. Put them between 2 towels and leave for about 10 minutes, so they will become more compact. Slice aubergine lengthways, starting from one side (not the stem!). Scoop out the flesh with a teaspoon (set it aside). Place aubergine slices in an oiled oven dish. Season them with salt and pepper to taste. Bake in preheated oven at 200 degrees for 15 minutes, flipping them over halfway through the cooking process. Add tofu into another oiled oven dish, season with salt and pepper, then sprinkle with spices. Bake in the oven for 10 minutes. Heat 3 tablespoons of soy sauce in a hot pan over medium heat. Add tofu slices to the pan, remove from heat and stir until all pieces are well-coated with sauce. Remove them from the pan and arrange them on a serving plate.
