I’m a big fan of Chicken Salad and it’s even better with ranch dressing on it. But, what’s with the fresh vegetables? Is that a good idea? Yes, and no.
If you’re going to make a Chicken Salad, I think you should use the same type of dressing you would use with your favorite chicken dish. No matter how nice the chicken tastes, it will be soggy if you don’t use the right type of dressing.
For the Chicken Salad, we are making a tortilla with lettuce, tomatoes, and tortilla chips. We are also using some diced onions and peppers. So I don’t think this is too bad for a salad but I do know that it does taste very good.
Start Chicken Salad with some fresh Veggies
It needs something added to it, so I want to use some fresh vegetables. It has to be fresh and it can’t be dried or frozen. For this salad we are using diced olives, sliced red and green bell peppers, and some carrots that have been lightly steamed in olive oil. We just steamed them to cut down on the cooking time and they were just as delicious as they were at room temperature.
For a little change, you can make a Chicken Salad that includes the addition of fresh mint leaves. That gives it a different flavor and it also makes it a lot easier to eat. You will be surprised at how great the lemon flavor it adds.
Ranch Dressing Comes Next
Another flavor that you can add to this salad is a little bit of ranch dressing. You may be surprised at how great this combination tastes. There is a lot of ranch flavor in the ranch dressing and the vinaigrette adds a little tang. You might be able to get away with a bottle of ranch dressing because the combination of flavors will be more than enough to give you the effect you are going for.
The fresh veggies and ranch dressing will make this a light and fresh salad. I added one large red onion and four large tomatoes to the mix. You can also add some celery if you want and a clove of garlic to give it some zing.
When making the Ranch Chicken Salad you are going to need to start off by taking some plain tortilla chips and placing them in a pan. Add a couple of tablespoons of ranch dressing and some cheese and garlic to taste. Stir these all together and cook them over medium heat until they are heated through.
You can serve this Salad with some leftover cooked rice, black beans, and homemade guacamole. This salad is really hearty and filling. If you love your chicken, you’ll be glad to try this one.
It does take some time and patience to make this Salad but it is well worth it. You will enjoy the flavor and the crunch of the tortilla chips. When the chicken is crispy and the ranch dressing is hot, you’ll be ready to go. You might be surprised at how much you enjoy your Chicken Salad.
The next time you make this Salad you can throw in some shredded cheddar cheese and one or two pieces of your favorite smoked Gouda or Provolone. It will make the Chicken Salad even more special and you might be able to add a few extra types of cheese if you wish.
