Ingredients: 6cups chopped greens as you like, 1cup chopped cucumber, one green apple chopped, 1cup broccoli florets, 1 avocado diced, ½ cup thinly sliced green onion, 1 cup shelled edamame, ½ cup pistachios roughly chopped, and 1 cup green grapes cut in half.


Dressing: juice of 1 lemon, 1small clove garlic minced, 1/3cup olive oil, ½ teaspoon Dijon mustard, ½ teaspoon maple syrup, 1/8 teaspoon black pepper, 2 tablespoons chopped fresh herbs.

Instruction: Place all dressing ingredients into a bowl and shake until combined and set aside. Take chopped greens into a bowl and top with the remaining chopped salad ingredient. Add salad along with the desired amount of dressing and mix it well.

Winter Fruit Salad

This winter fruit is a very easy healthy salad recipe that you can try because it is filled with a variety of fresh fruit.

Ingredients: 1tblespoon poppy seeds, 3 cups of cubed pineapple, 3tablespoon honey, 3 tablespoon lime juice, 1 cup of peeled quartered and sliced kiwis, ½ cup pomegranate arils, 2 cups of mandarin orange, fresh mint leaves optional.

Instructions: take a kiwi, pomegranate arils, pineapple, and mandarin orange in a large bowl. In a small jar, whisk together poppy seeds, lemon juice, and honey. After that, pour the poppy seed mixture over the fruits for dressing and toss it gently to coat. If you want, you can do garnish with mint leaves.

Chopped Greek Salad

This is another easy healthy salad recipe that has a variety of fresh vegetables along with creamy feta cheese, chickpeas, and olives. They all mixed with a herb vinaigrette and Greek lemon.

Ingredients: ¼ cup of chopped parsley, 2cups of quartered sliced cucumber, ½ cup crumbled feta cheese, ½ cup halved kalamata olives, 1 cup of chickpeas drained and rinsed, ½ cup of halved cherry tomatoes, ¼ cup minced red onion, 1 cup of finely diced red or yellow bell pepper.

Instruction: place olives, cucumbers, cherry tomatoes, chickpeas, onion, bell peppers in a bowl and mix it. If you want to add dressing, then you can make it and place dressing over it.
